Compilato utilizzando varie fonti, il Diaeteticon descrive la natura, la digeribilità e i pregi di diverse centinaia di alimenti diversi, pane, cereali, legumi, carne, pesce, pollame, frutta e bevande. Sottolinea il valore nutrizionale del pesce, i vantaggi di pane e frutta freschi, deplora l'uso eccessivo di sale e spezie, consiglia i diversi tipi di carne.<br
Tratta diffusamente del vino, nelle pagine 545-575, ne descrive le qualità e avverte di non mescolare vini diversi. Parla molto anche dell’acqua e dei molteplici benefici che procura alla salute. Gran parte del trattato è basato su autori romani e greci; Orazio, Giovenale e Marziale sono citati quando ridicolizzano alcuni cibi insoliti dell'aristocrazia romana. Le quattro parti di questo trattato, ciascuna comprendente fino a cinquanta sezioni, sono costellate da riferimenti e commenti letterari. First edition of this important and pioneering treatise on nutrition by the founder of medical dietetics. Luis Núñez, a Belgian doctor of Portuguese origin, is considered, thanks to this work, the founder of modern medical dietetics. The four parts of the treatise are dedicated respectively to: general observations, fruit and vegetables (I), meat, game and poultry (II), fish (III), drinks (IV). Compiled using various sources, the Diaeteticon describes the nature, digestibility and merits of several hundred different foods, breads, cereals, legumes, meat, fish, poultry, fruit and drinks. Emphasizes the nutritional value of fish, the benefits of fresh bread and fruit, deplores the excessive use of salt and spices, recommends different types of meat. It deals extensively with wine, on pages 545-575, it describes its qualities and warns against mixing different wines. He also talks a lot about water and the many benefits it provides for health. Much of the treatise is based on Roman and Greek authors; Horace, Juvenal, and Martial are quoted when ridiculing some unusual foods of the Roman aristocracy. The four parts of this treatise, each comprising up to fifty sections, are studded with literary references and commentaries. Overall, it can be considered the most remarkable compendium of ancient and modern dietetics and nutrition.
