He published his first Cajun cookbook in 1960, leading to a nationally syndicated cooking show on PBS and nine additional cookbooks. Wilson helped to popularize Cajun cuisine, charming viewers with his famous catchphrases and over-the-the top character. In this classic portrait, George Rodrigue depicts Wilson seated under an oak with his beloved Catahoula dogs (the state dog of Louisiana). Much like Rodrigue’s traditional Cajun figures, Wilson glows against the landscape in a white suit with his trademark red string bow tie.
