Each menu has a printed notation at the bottom indicating where in the system the menu would appear, i.e Boston only, system wide, etc. Waldorf Lunch was started in 1904 in Springfield, Massachusetts as way for patrons to enjoy a good lunch at a economical price and provided with fast service. In 1920, the lunch counter operation had expanded to 89 restaurants in 29 different cities in seven different States. By the mid 1920’s, the operation had expanded to 123 locations in over 49 cities along the Eastern Coast – Eastern Seaboard. It was also in this same year that the company officially became known as the “Waldorf System”. In keeping with its full name, "Waldorf Lunch System," everything about it was highly standardized. All food was prepared in a central commissary and delivered to the units.The company based it’s operating principal on “Prompt and Courteous Service” and their restaurants were “A Clean Place to Eat”. The Waldorf System prided itself in offering restaurant grade food at a “lunch room” price.
