Henry Ridleys “Spices” is a rare, early 20th-century culinary history on the cultivation and use of spices and flavoring in food. This work contains descriptions on Vanilla, nutmeg and mace, cloves, allspice, cinnamon, cassia bark, cardamom, pepper, ginger, dill, cumin, chilies, and turmeric. Note the full-page and in-text illustrations throughout. Ridley was a well-known English botanist who was a catalyst for rubber harvesting in Singapore. It wasnt until he made his way back to England in the 20th-century that Spices written.
